COLD ORZO PASTA SALAD

Ingredients
1 (10-oz.) box Ronzoni Orzo pasta
1 medium red onion
2 (4-oz.) pkgs Shitake mushrooms
½ (6-oz.) pkg. frozen baby peas
olive oil
sea salt
black pepper
Follow directions on Orzo box, bring water to a boil in a sauce pan, then add Orzo pasta and cook till al-dente. Rinse pasta in cold water, then place in large mixing bowl. Chop ½ red onion, place bag of frozen peas in microwave for 4 minutes. In a skillet sauté Shitake mushrooms with olive oil, sea salt and black pepper to taste. Combine Orzo pasta, baby peas, Shitake mushrooms and red onion. Drizzle mix with about ½ cup of olive oil. Cover with plastic wrap and place in refrigerator for at least 2 hours. Serve with grilled pork chops or BBQ chicken. Scoop Orzo salad with large spoon onto plate, finish with freshly grated Parmesan cheese and pork chop or BBQ chicken.
Options: substitute baby peas with fresh corn, then add black olives and tomatoes. Fantastic!
